Print Sizes
I am reworking my website and am looking to figure out what print sizes to offer. I notice some people just offer every photo in about every standard size. Is this normal? If so how do you take into account the change to the image as a result of the cropping that comes with the different dimensions?

It's up to you to shoot your photos so that you have the room for the different crops/aspect ratios that you might sell.
For example, if you shoot to fill the viewfinder, you may find that it doesn't work well when you go to crop for an 8x10. But if you can picture the 4:5 ratio when you are shooting, you can easily leave enough room for cropping later.
The proofing system that I use, Photocart, is a photo store on my website. I have it set so that when a customer chooses a particular size of print, the preview image automatically crops to that ratio, to give then an idea of what the print will look like.
