Mike,
what's wrong with saying cheese?
Not everyone feels comfortable in front of the camera and I'm speaking from personal experience. I spend more time behind then in front & on my wedding photographer who was shooting it had to take out funny silly glasses, b/c I was a wrack before the ceremony.

I wouldn't say anything is wrong with it. I would say, however, that I work as hard as I can to capture natural moments, and while I'm not always successful, I feel like saying cheese is the anti-natural, so to speak.
