Formatting Memory Cards?

So I've had my camera a while now, and I just bought some more SDHC cards. I've never bothered reading the instructions, but I noticed that it tells you to format the card, and on my camera there is a setting to format the card. In the camera's manual, it also tells me to format the card before use. I have never done this before, and was wondering if anyone else has? And why would you?
