For low light shots, ideally you'll need:
  • A full frame camera (D700 for $648-$729, D600 for $959, etc...)
  • A fast aperture lens (the ones with low f/#, like f/1.2, f/1.4, f/1.8, f/2, and f/2.8 - they let a lot of light into the camera - the lower the f/#, the better)
For high speed photography, from far way distances, ideally you'll need:
  • A high frames per second camera (at least 5 fps, or higher)
  • A telephoto lens (the ones starting from 85mm, and higher - the higher the #mm, the better)
If you really need these items, you will need to save a little bit more. Sorry for the bad news.

If you can't or don't want to save more at all, get the Nikkor D5200 with the kit lens + a Nikkor AF-S 55-200mm f/4-5.6G VR II lens, or any 70-300mm lens. You won't get what you want/need, but that will be the closer/best gear among your listed options.

There is always a compromise.

Good luck.

Nikon's D5300 has a Sony Exmor image sensor in it as is considered and ISOless image sensor that produces little image noise at higher ISO settings, a real plus for low light photography.
Another advantages the D5300 has are no AA/OPLF (anti- aliasing/optical low pass filter), and it has Wi-Fi and GPS.
