I was browsing apples website for manuals on it's aperture program when I discovered they've also published a 47 page pdf file called Aperture Digital Photography Fundamentals (Manual). It's not actually about their aperture software, but a guide to photography. It talks about things such as shutter speed, aperture (as in the lens aperture, not the program), etc. It's worth a look.
