How do I take photos like this?

Some photo editing programs have an adjust called "vibrance". Vibrance works just like "saturation" with ONE very big exception... "vibrance" protects colors which are near the color hues associated with human skin tones. This allows you to saturate "everything else" in your photo, without making any people in the photo appear saturated.

I noticed in a few of these, that certain colors appear to be selectively saturated -- you can always grab individual colors and do that.

i'd say a significant amount of how colors are rendered is within the lens. I have a wide variety of lenses from a number of different eras, each have very different charicteristics in terms of color and contrast.
