It seems like it will work to me, though you might want to upgrade to a newer camera, new or extremely gently used film cameras can be had for 100-200 dollars. If your planning on getting serious this would be the best bet because you could start building up a lens collection. If money is tight though that camera should work just fine, if all else fails just talk to the person teaching the class.
The XG-M is a perfectly capable manual focus 35mm SLR. If you only have one lens at the moment, you could pick up a whole collection ridiculously cheap on eBay. I can't see much reason to get something newer for learning on; the Minolta would be absolutely fine for a film based photo class.
