Invest more in Canon system or wait until switch?

You have been listening to people who know nothing about photography, it does not matter what camera you use, it is the photographer that takes the picture.
 
Sergio, here's what I'd do:

Stay with Canon. Don't spend more on bodies unless you really need one. Spend your money on rounding out your lenses, a bag, and a couple of good tripods. (one full size, one pocket size)

Unless you really need to save time switching lenses, or your livelihood depends on your having a back-up camera, just use the one body, don't upgrade it without a good reason. You'll get a lot more out of more lenses and actually traveling more for more photo opps.

In some cases, the gear does make a difference. For instance, if you want to be a top sports photographer, you'll probably want the fastest body, along with a 300 mm f/2.8.

If you're a nature photographer, you don't need the fast body, but will probably need the big lens. Remember the eagle pictures that were posted a week or so back? Totally impossible without the right lens or lens + teleconverter.

That said, you can do surprisingly well with a humble lens and some patience.

Of course, but the brand itself... is not as important (OP is considering switching brands not a particular piece of equipment). This is especially true between Nikon and Canon as both systems have equivalent collection of lenses available.
