For a student taking a photography class, I would look at the D300 or D700. I have a D200 that I bought from a student that used it for a couple photography classes and it still works fine and it bounces around in the trunk or the backseat of the car much of the time.
Of course the D7000 will work just fine for a photography course. Most of the older Nikons still do portrait just fine where you have control over the lighting, so you are certainly not going to outgrow it in a few months or even a few years.
