What is the best brand, size and speed memory card to use in a Canon EOS 40D?

Well here is some info on camera write speeds to cards and capacities

it appears that the 40D will take the monster 32GB cards - but personally I would exercise caution if you decied to use these - don't just have one 32GB card for everything. I would say two 4 GB cards are enough for most general use in either JPEG or RAW mode - a 32 I would take on a longer trip away from a computer and would take more than just it (no way would I want it to fail and lose everything)
 
I agree on the 4 gig cards, I personally use the Sandisk Extreme IIIs.
 
I've got a 16 GB card for my EOS 40D. It holds slightly over 1000 photos (RAW+small JPEG). That's not a bad match for the battery capacity, either.
