HDR is normally created during post processes. It's not possible with moving objects because it needs be the same during all the pictures.
Steps:
1. Take photo perfectly exposed.
2. Take photo 2 under exposure.
3. Take photo 2 above exposure.
4. Now load on the computer and use either photoshop or photomatix
5. In PS- File > Automate > Merge to HDR
It will do some internal processing and voila!
You have a High Dynamic Range photograph. All it is is that the entire picture is perfectly exposed bring out a ton of color and contrast.
Andy, as an automotive photographer, try some HDR shots on some still car photo shoots. Let's just say you will be AMAZED at what comes out!
