I've mainly done portrait sittings and weddings and am venturing into unknown billing territory. And suggestions would be much appreciated.

1. How do you price for say a restaurant that wants food shots, or a company that wants product shots? And of course an unlimited usage license.

I was thinking $60/hour for the shoot and post-processing. I live in Minneapolis.

2. What about model pictures and actor head shots? Do you bill that like a portrait sitting and charge for each print? Or do you have a flat fee and give them a digital negative with a unlimited usage license? If so, what is a moderate price for these services?

Wish I could give solid advice. Tough question.
Whatever you do, make sure you come out, after expenses and equipment amortization, with an hourly profit that you can live on.
You might be able to get an idea with 'net searches.
I used to charge a flat shoot fee then so much per print with a minimum stated.
I did some theatre work and then simply offered photos at so much per print.
