I don't know how you feel about Happy Holidays, but I think it would look good with just Happy Holidays in a curvy, scripty type of font. Goes with the style of the picture in my opinion. Really nice holiday card.

Well I played and this is what I have:

I like it A LOT better than the other one. And I'm not dropping the candy canes

in the updated ones, the first is my favourite. don't feel like you need to fill all the space, the negative space on that one makes the image stronger, and gives you a nice "thirds" arrangement. If you add in clipart to "fill it up" you'll draw all the attention away from an otherwise strong image.

i agree, the cliptart makes it look kind of "cheesy"... but if you aren't gunna drop the candy canes, then i guess it's good as it is
