What nikon camera would you recommend a beginner buy to get started with? I want something I won't be overwhelmed with.

all depends on your budget, used i'd go with a d5000 new i'd go with d3100 or d5100 for a beginner. Dont be afraid of the d7000 either its a very powerful camera.

Yes, depends on your budget. Then your interest i.e.:
1. Point & Shot or manual
2. Landscape, portrait, macro etc
