Know this has been covered.
Going to Mexico this spring and want to take
pictures of the locals with a blurred background.
Shoot in apperture mode with a high f/stop?
Any help appreciated.

Get a greater DOF you need a higher f/stop (close the aperture ie. f/22) Which will have most of the things in focus. To get a blurred background you need to use a low f/#(open up the aperture) at about F/2.8 if your lens goes that low. Also it depends how far away you subject is from the background. The further away he is the more blurred it will be.

It depends of what type of scene you are planning to take. With your current setup, if you are planning to take some portrait shots with a blurred background, your 55-200mm range lens is a better choice when you use it outdoor. Unless you are planning to get a faster lens (Max aperture of the lens is at least f/2.8 or lower - smaller the number, larger the aperture). By the way, use a larger aperture (lower F number) if possible.

Just step back a little bit with the telephone zoom mount on your camera. Take a photo of a subjects stand/sit closer to your camera. And with the background far away from the your subject. You can try this before you heading to Mexico. By the way, use the larger aperture (or lower F number) if possible.

As everybody is saying...

You want crisp subjects and blurred backgrounds, use the 55-200 at the longer end, and shoot as close to wide open (low f-stop number) as possible

But pay close attention to focus because it will only be a few inches to a few feet deep..
