F-stop

does anyone know how to change the F-stop on a Canon EOS 20D?

Have you read the manual?

It depends which mode you are in. If you are in Av (aperture priority mode) then I think it's the main control dial (up by the shutter release button). If you are in Manual mode, then it's either the main dial or the thumb wheel (one is shutter and the other will be aperture)/
