A chance encounter here rewarded me with shots of this lil one as it flew around the flowers hanging on my front porch. I normally choose to shoot in manual mode, but I chose Shutter Priority mode.. Dialed up 2000 on the shutter speed and let the camera do the rest.. I'm happy with the shot, but I can't help but wonder if I should have gone a little faster on the shutter speed.. The iso was already at 2000 tho.... Any insight into preferred camera settings for shooting humming birds would be most appreciated...

Great capture. I think your change to S was a good choice.
 
Very nice shot. I agree that your change to shutter priority was a good decision.

A lot depends on the camera that you have as to where you might start to get noise from a high ISO. I have shot images inside native huts in Africa at ISOs up to 5,000 to 10,000 without severe noise problems (Canon 1D X Mark I). Even with some noise, there are good software apps around to help in removing noise from an image.
