Fast shutter speed, a decent flash, and good timing. Read the manual on how to set these up.

You can use your d5100 to take in Black and White but I would take colour and convert in softwear of choice. When you have the camera sorted good luck with a model willing to dip her hair in water untill you get the result you want. Take lots of photos.
