Lenses with Aperture and Focus Rings

Wich Digital Camera and/or Lens have Aperture and Focus Rings on the lens?

I want to shoot pictures as in the '80....

All Nikkors prior to the current G and E (Electronic Aperture lenses) lenses. Nikon still has some AF-D and even an Ai lens listed on their website.

Fuji-X cameras. Lenses (primes) even have DOF scales.

Fuji isn't cheap, but their digital camera are designed to give you the feel of a SLR with all the primary functions being manually controlled with dials and levers. Fujinon lenses are top notch.

Any M42 screw fit lens with an adapter. Lenses are very cheap (compared to digital lenses) because so many millions of them were made over 40-odd years. If you have a Pentax digital camera, K mount lenses will fit and the older ones all are manual focus and manual aperture.
