I haven't read that download yet so if this is answered in it (which I'm sure it is) I apologize BUT... would you say there's a notable difference in accurate color between Custom WB off of a white surface, Custom WB off of an 18% grey surface or using Auto WB?

Yes.

And since a picture paints a thousand words: do testshots, YOURSELF, so that you can actually SEE the difference.
The proof of the pudding is in the eating, after all.

so metering off a white card will yield different results than an 18% card? hmmm
