In Camera (7D MK II) Processing

I am very new to HDR, can I use my in Camera processing?
I want to because
a) I cannot always see if a scene would benefit (sadly we don't have anywhere scenic to test).
b) Why not let the camera do it, if it can?

Or with practice are people always better at combining the images the an automatic process?
BTW somethings - photo stacking in macro photography no one does manually (I could be wrong about this).

I frequently use my camera's inbuilt HDR capability - it tends to reduce blown highlights and block shadows rather than prevent them but sometimes that is the only way to get a good exposure and retain ambiance.
