i don't know which of the below two look better;

Wow, the way you treated the third photo in order to achieve the fourth as a new version of the third is good!
Or is the fourth the original and the desaturated third the treated one???

Anyhow I like the colours (mostly so those of that bit of blue sky) so much better in the fourth.

The second looks like - if it were mine - I'd surely give it some curve adjustment treatment to make it darker and more contrasty - and unfortunately in the first the sky is so blown-out that I guess that is beyond rescue...

Composition wise, I'm favoring 3 and 4 from the photos here.
Post-treatment wise, I'd pick 3 over 4.
