Presumably by taking a fast sequence of shots and cutting the cyclist from all but one and placing the removed images on that one.

There really is no other way to do this on a DSLR. Get a tripod and set your camera to contiuous shooting. It is very simple with limited knowledge of photoshop.

ive done a few before. i did it exactly as the other posts describe.

I experimented with this a while ago. I set up the camera on a tri-pod and took 3 different shots. In photoshop I erased parts of each layer with a feathered brush until all of the images showed through. I know there are probably more technical ways to accomplish the same thing but this worked just fine for me.
