I bounce the flash (nikon 910) straight up directly over the camera. This seems to give the best defused coverage for me.

Yes it's like a large soft box, however the downside is is your light direction is all from above. Might I suggest something I do frequently, put a large reflector down low under your camera at a 45 degree angle toward the subject. You'll be surprised at how much light it will move into the shadows and minimize blemishes.
