Editing photo Like this ???

Not to be rude, but those shots are pretty horrid in my opinion. But as Lew said, crank up the saturation.

I would like to know how they did it so I don't mistakenly do the same and ruin my pictures.

There are lots of ways to do anything and its hard to tell exactly but, it looks to me a combination of two things.
Raising the black point alone on a curves or levels layer and then increasing the saturation.
Raising the black point increases the amount of dark shadow and, where there is a lot of detail, acts like eye-liner by increasing the edge thickness and darkening it. At the same time it decreases the numbers of different tones in the dark areas making them more 'solid'

Looking at the histogram seems to emphasize that.
Lots of blacks and darks but still a wide contrast range.
Doing this often/sometimes results in halos around thin black things, like twigs, but the picture is too small to see.
This over-processing should come with a warning that it may affect your vision or your judgement by looking at it.
