Cars that use NO2 a.k.a. nitrous oxide as a power-booster sometimes will vent gaseous NO2 out of the system before making a run. This ensures only liquid NO2 is available when the driver hits the throttle, making maximum power immediately. There is also an element of showmanship.
I could hear the hissing from where I was sitting and it adds another dimension to the spectacle.
