I braved the impending weather and hopped out of the truck to get some shots of this old covered bridge before the rain drops started.... I under exposed the shot some for some more contrast and depth in colors...

I'm not sure I follow your reasoning here--under exposing just under exposes the image. Makes it darker. Yes, OVER exposing an image would decrease saturation and depth, but the inverse isn't the same. Personally, this would have been better had you nailed the exposure. Composition isn't bad, but it's not great. To me it seems like a snap of a pretty scene, and not a planned and executed photo.

If I understand you correctly, the first image is the edited, but honestly, I prefer the second, brighter image. I think it would be better to get more of the colorful trees into the shot, which would also get the bridge out of the center.

second is a bit much for me.
underexposed as in literally purposely underexposed or underexposed as it was kind of dim and that is how it looked? Some will say underexposed, which it isn't. if it was dim or dark then it was dim or dark easy confusion there. Others say it is properly exposed, when it isn't, it really is underexposed.
 
better to expose correctly and then add contrast and such in post. From what I have heard there isn't great looking foliage around this bridge this fall though, that's a bummer.

The best of the color seemed to be around the cemetery across the road from the bridge this year..

I don't really see anything wrong with the original image. I might try to bring out just a tiny bit more detail inside the bridge, but not so much that it looks artificial.
 
Looks like a beautiful scene! Is it just me or is the focus off? I keep expecting to see it on the sign on the bridge but that part looks blurry? Maybe I need to switch contacts now or something, I dunno.

Again, very pretty scenery! It'd be awesome to go back and get some more photos once/if the foliage starts changing...
 
I love the bridge, and the beautiful colors. It seems to me like the bridge is slanted forward a little; I wonder if a teeny bit of straightening would help?

I actually like the original pretty well when I view it full screen; much more than I expected to from the thumbnail. Still, I think I'd prefer something between the first and second. On the first, the bridge is just a bit too dark and loses some detail that would be really nice to have. But the second, to me, is just too bright given the impending storm conditions of the sky--it's incongruous and just doesn't really work well, imo.

If you shoot again I'd be tempted to do an HDR on this to get the details in the bridge. Not a bright, cartoony HDR, but just enough to get more detail in some places that you've got in the original.
 
Oooh! Setting up a wireless flash inside might make for a really cool shot? You could play around with some modifiers (different colored gels, etc.). Kinda wish I were close enough to try it!
 
Like sm4him I would try an HDR on this. This scene could definitely be worked some more.
