Help choosing a compact for self takes holding fish!

Hi,
I am looking to replace my Canon S3is, I know it’s very dated & in truth never been brilliant for what I require.
I basically need a static camera that can be easily programmed to delay for say 20 seconds then shoot 10 shots, 1 every
Couple of seconds or so. The issue I have always had is than my camera focuses as soon as I press go, without me in shot.
As such I rarely get the sharp pictures I want. I also take as many pics at night as in the day. I use a couple of lights set up to help.
I know technology has moved on massively since I bought my camera & want something that will see me thru a good few years.

So, I set camera up, set custom timer….press go…..
I then move into shot, pick up wet fish & attempt to smile while showing off my catch……
I know I can use an intervalometer, but sadly not on my camera though.
With that in mind would I be better getting one & a camera & use together or is there a camera than will do all that in the one package?
Ideally I don’t want to spend any more than necessary & think sourcing secondhand is an option.
The ones I have looked at are
Canon g7x mk2
Canon R50
Sony ZV

Please go easy as I genuinely have zero knowledge on how best to fulfill this
I should also say it needs to be idiot proof, but you’ve probably guessed that!!!

Howdy and welcome! Look for a camera that enables you to use your cell to focus and trigger the camera timer so that you can compose yourself. The S3 of course, can't do that, so an upgrade is in order. There are a number of reputable second-hand sales outfits, mpb.com being one of them available in the UK, from which you can get good kit.
 
I don't have any knowledge of the above cameras. I've used intervalometer on past cameras that did not have it built in. It does take a bit to set up. For built in maybe a used Sony RX100 series camera. That camera has an easy to use app in camera.
 
I should of mentioned that a flip screen is a must
 
With my Pentax DSLR you can use wifi to control the camera on you iPad or phone, including telling it to refocus.. Set the time and you have 10 seconds to put your phone in your pocket, and since Pentax tends to be behind everyone else in everything, I assume all cameras have that capability. As for a nice portable camera to take fishing....it's har to beat a phone. Waterproof, shock proof. Just get a tripod mount for it and a small tripod. My persoanl choice for a small 1 inch sensor camera would be a Lumix ZS series camera. Great image quality, small package.

On a wifi set up, your phone or tablet is your screen.
