Is it possible to change a iso chip or ccd chip in a nikon d80 to a chip that can get higher iso

It is possible ... but it would require you to find someone to redesign (and reprogram) the camera for you ... so the practical answer is no.

It would be great to make the sensor as interchangeable as film ... but that is a pipe dream.

There are some firmwire cracks for some DSLRs out there which can enable things like a higher ISO setting - I've no idea if there are any for the D80, and it goes without saying that using firmwire cracks comes with its own risks (not least voiding your camera warranty).

If you can't get the light you need you might well be best to consider investing in lighting of your own - flashes and the like to supplement the low light that you have to work with.

As mentioned, it's probably possible...but it would likely cost 10 times more than just buying a newer, better camera.
