I think I would like it better if it not bright red.

I would like it better if you decided that you prefer this image in b/w or color. Though I suppose the selective red does distract the viewer from the well over exposed water.

I was hoping for a traditional B&W of a vintage mill. I guess I'm just not into this type of processing, but that's just me.

try pushing the mill building very dark, use the channel mixer...
