How many strobes? How many catchlights?

I tested my studio strobes on my son today. Normally I use two lights... a main and a fill. Sometimes/most of the time though my lighting comes out flat. I used one light today on my son and I liked the results because of the depth and the catchlights. Looking at other portraits online I see only one catchlight... Is this because they use one light or do they use the usual main and fill and somehow get rid of the 2nd catchlight? Is there a rule for catchlights?

The angle of the lights compared to the eyes could cause them to not produce a catch light. It's also possible that they cloned out all but one...

As far as "rules", I don't know of any. I do think that one catch light looks best though
