Small sensors have loads of DOF, and unfortunately you want just the oposite.
This is one of the main reasons why some are so fixated on 'Full Frame'
The (non flipant) tips above will help you get the best of a bad job, though I suspect you still won't be able to match what was eaisly acheivable with a SLR, without resorting to software.
One other possibility that you might be able to get to work OK would be false backgrounds. Not easy to use, but a possibility in a more controlled environment if the software approach doesn't appeal.
