It's that time of year again... white asparagus!

Until June 24, 2018 it's aviable in The Netherlands: asparagus
This year an even more expensive joke than before.
Last week prices started around €20 ($24) kilo, yesterday this asparagus cost €10 ($12) kilo and then you have 8-9 pieces.
The traditional Dutch style means asparagus with slightly warmed ham, boiled eggs and cooked pommes parisiennes, although I prefer backed french potatoes.
Ofcourse a white wine, we prefer a chilled chardonnay, to accompany this dish.

Why is it so expensive? (Is it just the white asparagus?)

Once we're in season here (we're still a couple weeks away for full swing), I can buy it at any farmer's market for 5-6$ for that same kg, although it's green and not white.

White asparagus???? Ours is the traditional green. We had a good run, on our little beds, but unfortunately the season is over for us

I think one could find white asparagus here, although I've never looked for it, specifically.

I didn't know this---- The difference between white and green asparagus: white asparagus is grown underground. Growers cover the spears in mounded dirt or black plastic tunnels so that they’re not exposed to light and don't produce chlorophyll (which would turn them green). Maybe that's why it is more expensive?

Our standard dish is to wrap a few with a strip of bacon, marinate them in Dales (local seasoning sauce) and grill.

I don't buy it, it grows wild here in Michigan, usually in the ditch's on farms. Already picked some just yesterday. Next couple weeks will be stocking up. Someone found my killer spots last year and got there before me. I checked them spots yesterday, and there are some fat stubs coming up.
