Lightroom--What to Back Up and How?

So, here's the skinny. I have a 750gb harddrive on my laptop, an external 500gb HD, and a 2TB HD on the way. I currently have NOTHING backed up, and as I get more and more serious with photography I realize I need to start archiving and backing up. My idea was this: Have a LRCAT on my mac, as well as all my photo's. Have a backup of my favorites (my "portfolio" and all the ones I post on the interwebs) as well as a backup of my LRCAT on the 500GB, and then a backup of my favorites, all my photos, and the LRCAT on the 2TB. And start backing up on a weekly or shoot/by/shoot basis. Thoughts? Ideas? I don't really want to have the LR catalog separate from my comp, as I don't want to always need the external HD to edit/organize photo's.

What about other documents on your computer. do you back those up?
Why not just back up everything?

I have my system set up so that it automatically backs up everything in the specified folders, which includes all my documents & all my photos etc. And I really should have a back up of my back up.

I plan to back those up as well. Just didn't specify that. Whoops!
