RAW in particular has little to do with helping you fake infrared.
The thing is, infrared colors do not actually correspond 1:1 with visible colors. In other words, some green things like leaves will be bright in infrared. Other green things will just be grayish/normal (like green paint).
RAW does not know the difference between green substances that produce their own heat from respiration versus green substances that are cold. Thus, no amount of precision in RAW is going to give you what you need to fake infrared automatically.
You would need to manually go in and individually select things that should be certain colors, for each photograph, using selection tools, etc. Requires a lot of labor and a solid knowledge of how infrared light works and what sorts of things would reflect or produce it the most.
