If you are going to buy Nikon go with the D5100. It's a BIG improvement over the D3100.
Which to buy? Whichever one is right for you. I am a Canon kind of girl because that is what fits me and works the way I want it to work.
If I had to choose between the D5100 and the T3? I'd PROBABLY go with the T3 ONLY because there is no AF motor in the D5100 (nor is there one in the D3100) and that limits you on some lenses that will only be manual focus. Plus it will cost you extra on each lens to get the one with the AF motor in it. Otherwise, for every other spec? I'd buy the D5100.
You couldn't pay me to buy a D3100. Just too many upgrades to the D5100 not to do it.

The 75-300 lens with the canon isn't the hottest lens for quality.

And lastly, no, the deals there aren't so hot on the canons.
