I've only really used jpeg with my Canon XS, and was wondering what RAW is and why some people prefer it to jpg. What is the difference between the file types? Is RAW really better?

Simply put, the RAW file contains all the data from the light that reached the sensor. A jpg is an abbreviated lossy compressed edit from RAW that in your case was performed by the camera. A RAW file can edited with software to achieve results otherwise unobtainable.
