It says nomad on the back of his shirt, right below the collar.

Very interesting shot. Did you do multiple flashes for it? The tone, like an Frequency said, is great. However, I would suggest cropping off that right part where the blown out white is. I like the lights overhead as well.

I did see that logo,just wasn't totally enough to make it the focus of the photo. Me only.

It was 6 images layered up in PS with different blending modes. No tripod was involved, just the camera sat on a rail and held still whilst the chef was doing his thing.
