Same setup yet different results... What am I doing wrong?

Something no one has addressed is that you are using available window light and you cannot expect the quality of available light to remain constant from day to day or even hour to hour. So you will have to adjust your settings accordingly each time. It's much easier to control man made light than to try to get consistent results from natural light.

I haven't touched my camera settings or anything in the scene by the window (at least, I don't think I have) It is quite possible I bumped something but I can't imagine what.

Obviously something changed. Try to retrace your steps to the point where something changed.

If you can't figure it out, just start again, and chalk up the variances to experience.
