Not particularly well travelled for these - all taken within 25kms of home. Hence the title

What's the purpose of these towers (past/present) ?

These are all water towers, almost every small village and town has one of these in this area. They are all currently in use.
This area has such a lot of clean fresh water below ground that it was easier/cheaper to build a tower just where it was needed, rather than pipe potable water from a central station.
It's interesting that with each water bill, we get a comprehensive water quality report for the water we get from our local tower.

Some are even "underground"

Some I visit quite regularly...
