Which is best; shooting monochrome mode in camera or converting to grayscale on computer?

Hands down: Shoot raw, and convert in post.

But camera set to monochrome so you can at least see the camera-converted JPEG on the monitor.

Converting it in post and my reasoning behind that is that most of the software that you would use to do this give you far more control over the conversion than the camera does.

I assume you are not talking about your Nikon EM ... I shoot raw to have more pp control vs to what is pre-programmed ... though I do like Ilford Pan F plus in-camera.

I like the look of the B&W from my Sigma camera as is, but find other cameras I use (have used) lack that certain something. The Canon I have (10D) doesn't do B&W, though, so perhaps more up-to-date models from that stable are okay.

Then that's just one way based solely on your preferences. That doesn't automatically make it 'the best' way.
