D300 settings question?

I often shoot manually. I've become very annoyed that I can change the shutting and aperture settings, snap a shot, then when I take my finger off the shutter button the camera changes the settings I just set. Is this an automatic operation that I can just turn off somewhere on the camera?
 
Well there are a plethora of custom settings related to metering and function assignment. I'm not sure what you mean though - how is the camera changing your settings in manual mode? Which settings are being modified?
 
Are you absolutely sure you're in the Manual Shooting Mode? Take you right index finger and press down on the Mode button (same as if you are formatting your memory card) and with your thumb, turn the command dial to "M" (displayed in the top LCD). If that is the case, then there might be a fault because your settings should not change unless you change them.

Maybe your camera is possessed?

The only thing I can think of is that you may be shooting in P not M.
 
It's definitely Manual.

The only settings that change are shutter speed and aperture. Sometimes, not always. It's a pain because I'm constantly having to remember the previous settings of the last shot I took if I need to tweak them from where they were. If I have it set at 1/200 f/2.8 and take a shot at those settings, when I let go of the shutter button the camera may set itself at 1/400 f/2.8 or 1/125 f/3.5, etc.

I still use autofocus, so that part isn't manual, but it shouldn't affect those settings, should it?
 
Ah, I bet you have Bracketing on. Press the Fn button and rotate the main command dial until you see 0F 0.3 in the Control panel and/or the +/- icon disappears from your viewfinder.
