In auto mode the - through 0 and to + scale is not an issue. In other modes spinning the dials until only an indicator mark aligns with the 0 indicates "proper" exposure. You may want to over expose for snow as an example and adjust so that a series of indicators build going to the +. Or underexpose for dark scenes. Set these indicator EV increments up per pg 84 in the manual.
