Here's my little thought on the discussion:
ShooterDan, if you can't see any difference when previewing the DoF, there is one thing that might make it impossible for you to see the difference.
Have you adjusted your diopter ? The adjuster ring by the view finder. Basically, is your view finder itself in focus ? This is usually for glass wearing people to use the camera without glasses.
That was the only thing I could add to the excellent help you've had so far.
