Jonmikal, there isn't much to putting a title on the image other than using the type tool, and lining it up in the right spot. Picking a good font is important too. That font is called Monika, and you can get it at dafont.com.

If you are referring to how the text changes to white where it overlaps the image, I can explain that easily.

You duplicate the text layer, and have the top version in black, and the bottom in white. Add a layer mask to the top text layer (black) and you mask off the parts that overlap the image. I always have my image on a seperate layer from the background/border, so I can easily select it with a ctrl click on the layer. So with the black text layers mask highlighted, ctrl-click the image layer, (now you have selected the image, including the area where the text overlaps) and fill the mask with black. Make your foreground color black and hit alt+backspace. Done.
