Hey, who do you know is so good and fast at cutting filets off the fish bones? Wow. They look nicely thick and as if cut in one go. Well done (by the filet cutter) . Fairly graphic photography, as you are saying, but sharp and clear (as is suggested by their presentation size at least).

I actually spent 8 cold hours on a boat yesterday with some friends. The person filleting is actually the deck hand. He was in fact very quick.
