General rule of thumb when using strips...

What is the general rule of thumb when using strips as kickers?

For instance, if my 4x6 key light is metered at 5.6, should the kickers be a stop higher, or a stop lower? Two stops? Or is it user preference.

To date, I've just relied on the 'that looks good' skillset; however I'm trying to get better about metering before shooting etc.

I really don't think there could be a rule of thumb; it's going to depend totally on the situation, desired look, etc. Are you using it to provide subtle fill, rim-light, or??? I was at a lighting seminar recently and the [very accomplished*] photographer instructing was adamant that the key to good lighting was to always start with your smallest light and work your way up to the key.
