Gimble vs Video head

Need some inputs on the use of Gimble head and Suitable video head.
The gear in focus is 600mm + 1Dx mk2 on a Gitzo series 5.
Currently, I am using a Jobu design Pro gimble head. Shooting predominantly birds.
I am exploring on using a suitable video head with same gear, Sachter or its alike...
Reason for this is predominantly ease of carrying around...
Would appreciate guidance / inputs.

For movement, as in sports, I use a gimbal head.
I tried a 3-way pan head, and I could not follow the action well enough. The pan head had too much friction/drag, and did not pivot well. That is why I got the gimbal head.
A video head is a pan head with adjustable friction, so IMHO, not much better.
I would stay with a gimbal for tracking flying birds.
