And I don't agree w/ getting paid. I consider some artists to be truly professional. But I know I've heard a phrase about starving artists or something

I doubt that is there definition. They are merely concerned with someone declaring thier earnings over $600, so that they can get thier $.

And that's where you show you're not a pro. They do have a definition for the purpose of keeping amateurs from taking deductions they are not entitled to.

Its a position or status given to you by others. A person can not say they are a pro because its a title given from respect not income. An Amatuer can get paid also ie. awards and prizes or scholarships, grants, donations.
