Wow, what a variety of methods. OP I hope you don't have a.d.d. You have been given some really solid advice; along with some that could make things even more confusing for you.

Hopefully you will find something that works well before your trip. I shoot wildlife (mostly birds) and could not imagine shooting full manual. Not only are the subjects most often on the move, but so am I. For the most part, I shoot in aperture priority and select iso between 200-800. My iso changes only if the conditions/light changes and I change my aperture only when I have time and want a different depth of field.

I can make the same choices shooting in aperture priority as I could shooting manual; a button and a finger for iso, a wheel and a thumb for shutter speed, and a finger and wheel for aperture.
